I didn’t say from a can! Many grocery stores have the convenient, pre-diced fruit that you can easily dice into smaller pieces as needed, and just drop into your bowl. You don’t even have to wait for the flavors to “marry.” Need even less time? Go ahead and purchase diced fruit from your produce department. The only time-consuming part of this recipe is the prep work. In searching for something creative, I came across, who has an easy pineapple mango salsa recipe. Until it was presented to me to create something for a Tiki Party idea. Transfer to a serving bowl garnish with additional cilantro, if desired. Add hot sauce, lime zest, lime juice and salt toss until coated. Because this recipe includes salt as one of the ingredients (and the salt will cause the fruit to give up some of it’s liquid), we recommend that you mix everything together and add the salt just before serving. Stir pineapple, mango, bell pepper, onion, cilantro and jalapeño together in a large bowl. Not impossible my first try was a little bit of a challenge. It’s a tiny bit of work to get the “meat” out of the pineapple. Squeeze the fresh lime juice over the salsa and sprinkle with salt and red pepper flakes, to taste. In a mixing bowl, combine the mango, pineapple, red onion, jalapeño, cilantro, lime juice, and olive oil. Drain off any excess liquid before serving. Leftover salsa may release some liquid as it sits in the refrigerator. It certainly makes a statement, but it is not required. Peel the pineapple and mango, then dice it into 1/4- to 1/2-inch chunks. Store it in the fridge tightly covered and sealed. You don’t have to scoop out your pineapple for this presentation.
